One thing I noticed about cookoffs are that they are a hell of alot different than cooking in your backyard. I learned the hard way and ended up running out of time on my brisket. What I've started doing almost everytime I BBQ is trying to meet a deadline and I usually try to set it up just like a cookoff. I suggest if you have a team you're gonna be cooking with, to make a few trial runs as a team to see if you can finish in time and see how your product turns out. I watch lots of cookoffs on TV and the teams that win are impressive to watch. Each member knows exactly what his job is and what he's supposed to do. There's not much discussion going on and very little confusion. One team in particular had one person maintaining temperature, one person handling the meat (basting, sauce etc), and one person keeping everything clean and in order...it was amazing how calm they were as opposed to the other guys running around like headless chickens.
