The pics above are of my new smoker. Fabrication started in April, 2005 using 5/16in steel pipe. We welded up the unit over the summer. After sandblasting and paint, the bottom photo shows how the unit looks now. The wheels and fenders are chromed, but the remainder of the add-ons are stainless steel. After 5 1/2 months, all my efforts paid off as this is the best smoker I have ever cooked on.

This is undoubtedly the best smoker I have ever cooked on. I did deviate from the normal break-in oils and used lard to season it with. As big as this smoker is, it only took 2 lbs of lard to completely coat the steel and grates. It seasoned for 2 hours at 175 degrees, 4 hours at 200 degrees, and 11 hours at 225 degrees. The interior of the unit sealed perfectly and without any trace odors. Try some lard when you season the next smoker instead of spray-on oils...you will like its properties.

New to the site.... read a lot of your post, great info by folks who know their que! I'm getting ready to make a Grill/Smoker out of a 4' x 2' water tank and I'm interested in your build.
