I'm in the market for a smoker. Nothing really big, just something a little more heavy duty than the Char Broil smoker I'm using now. What about those Big Green Eggs? At the clifton cookoff, the old lady that won every single year in damn near all categories used one.

I am bringing my welding unit to the Ranch in a couple of weeks...you and Bubba should get together and think about building one. I am also bringing my Oklahoma Joes to the Ranch, and you and Bubba are welcome to use it all you want to, including contests. Bubba has cooked on this smoker for the past 7-8 years and should be able to turn out some pretty good product if he had some help....interested??? As far as the Big Green Egg, stay with a conventional smoker...it is alot more forgiving and requires a hell of alot less attention...and unless you cook with the damned things everyday, your meats will not be very consistent (temp control can be a problem)...and there is not much room in them to cook in.

I couldn't be happier with this pit. I've been smoking briskets for ten years now and this was by far the best brisket I've ever smoked. The flavor was great. In fact nobody even used sauce! I'm really impressed with how maintenance free the pit makes the cooking process. My other pit, I'd find myself opening and closing dampers etc....here a chimney full of charcoal and some wood chunks and the pit does the rest. Thermometer barely moves. Going to try some ribs this weekend.
