After you either season a new smoker or buy one already seasoned, an easy way to find the hot spots in your new unit is to get the cooker fired up to about 250-300 degrees. After you get it up to temp, open up 2-3 cans of cheap biscuits (dough) and place them individually on top of the cooking grates, but no farther than 6-8 inches apart. Close the lid and check the biscuits in about 10-12 minutes...hot areas will produce burned biscuits and you should make a note of that area for future reference. Knowing your pit will make you a better BBQ guru...just food for thought.
