There are more and more contest sponsoring the "Anything But" category. This was typically found in some of your bigger KCBS events, but is gaining in popularity at more cook-offs every season. For a small entry fee, each BBQ team is invited to turn in an on-site cooked entry consisting of anything they want to present, as long as it is NOT one of the 4 meat groups (brisket, ribs, chicken or pork shoulder/butt). Some teams turn in deserts, steaks, veggies, breads, "road-kill", etc. In the contests I have entered and this category was included, I turn in a pork tenderloin...it is easy to cook, does not take much time and is fairly inexpensive. The tenderloin can be smoked or grilled and can be turned in with sauce and/or garnishment. The judging is usually held on Friday night (after the Judge's meeting) and the winner gets a nice cash prize. So, the next time you enter a contest and the "Anything But" is offered, give it a shot and see how well you stack up against the competition.

Another item you might consider cooking for the anything but is Boudain. This is a Cajun sausage consisting primarily of rice and pork, with ample seasoning. I have been cooking Boudain for a couple of years and everyone who has tried it likes it alot. I have seen it recently with jalepeno seasoning, something I will be cooking within the next couple of weeks. If you smoke it, get it close to the firebox. When the rice starts pushing out of the end of the casing, it is done. Good Luck

I had never even heard of boudain until you made it at the ranch a few months ago. I've been cooking it around here ever since. And it's cheap!!!!
